The weather feels quite summer-y today in Central Iowa, but, if you follow my blog at all, you know I love casserole. Easy, (almost) one pan, leftovers. We aren’t real committed to low-carb around here, but we do love cauliflower, so this was a win:
In large skillet, brown…
- 1 pound of hamburger (or ground turkey)
- Drain (if you prefer), and add…
- 2 T. minced garlic
- 2 T. yellow mustard
- 2 T. dill relish
- 1 T. onion powder
- 8 ounces cream cheese
- 15 ounces tomato sauce
- 1 head of cauliflower (riced)
- Combine and pour into greased 9 x 13 pan. Top with cheddar cheese. Bake at 375* for 25ish minutes, until bubbly.
This isn’t a very attractive casserole, but it’s definitely delicious! You could make this truly one-pan by cooking it in a large cast iron skillet, but I’m a little Type A about tomatoes in my cast iron (ask my husband, I’m Type A about everything). Try it out with your favorite burger toppings and let me know what you think!
