Smoky Bacon Mac and Cheese

My go-to weeknight dinner has absolutely become one pot pasta! My intention for this creation was to use smoked sausage, but due to a grocery store error, I ended up using bacon. I don’t think you’d be disappointed with either protein!

  • smoky bacon macIn large pot, saute 12 ounces hickory smoked bacon. Drain.
  • Stir in…
    • 2 cups chicken broth
    • 1 cup milk
    • 14.5 ounce can of fire roasted tomatoes
    • 1 box elbow macaroni
    • Simmer for 15-20 minutes, until liquid is absorbed and pasta is soft.
  • Once pasta is cooked, stir in 4 ounces smoked cheddar cheese.

I’m not even going to pretend this was healthy, though I did use my favorite “carb conscious” pasta. Regardless, this hearty main dish was perfect for today’s cold, windy weather! Maybe stir in some peas to feel better about your life. 🙂
