My go-to weeknight dinner has absolutely become one pot pasta! My intention for this creation was to use smoked sausage, but due to a grocery store error, I ended up using bacon. I don’t think you’d be disappointed with either protein!
In large pot, saute 12 ounces hickory smoked bacon. Drain.
- Stir in…
- 2 cups chicken broth
- 1 cup milk
- 14.5 ounce can of fire roasted tomatoes
- 1 box elbow macaroni
- Simmer for 15-20 minutes, until liquid is absorbed and pasta is soft.
- Once pasta is cooked, stir in 4 ounces smoked cheddar cheese.
I’m not even going to pretend this was healthy, though I did use my favorite “carb conscious” pasta. Regardless, this hearty main dish was perfect for today’s cold, windy weather! Maybe stir in some peas to feel better about your life. 🙂
