Wednesdays are crazy for me during the school year. The school day starts with meetings…often ends with meetings…and is followed up by church responsibilities. Oh yea, and I teach 8th grade all day! š I often treat myself to dinner on the town as a reward for the craziness, but today, I acted responsibly and planned a quick and (moderately) healthy meal!
In large pot, brown 1 pound of sausage (or other meat of choice).

- 2 cups of chicken broth
- 1 cup of milk
- 1 box of pasta
- 1 jar of salsa
- Bring liquid to a boil and allow to simmer for 15ish minutes, until liquid is absorbed and pasta is soft.

- 4 ounces of Mexican blend cheese
I desperately wish I would have bought corn to toss in this as well. Otherwise, the salsa was the perfect shortcut: peppers, onions, and all the spice without all the prep work. Dollop on a spoonful of sour cream if you are feeling adventurous…and speaking of adventurous…just imagine the possibilities for this recipe considering the myriad of salsas out there!
