I’m going to go ahead and be up front that I didn’t LOVE this…it was good…but not great. That said, please leave a comment for me on how to improve it. Spaghetti squash is one of my favorite ways to cut the carbs and fat!
Prepare one medium spaghetti squash…
- Pierce many times with a knife.
- Microwave for 10-20 minutes, until soft.
- Cut in half to cool.
- While squash is cooking, in large skillet…
- Saute in olive oil…
- 1 Tablespoon minced garlic
- 2 minced shallots
- Once softened, stir in…
- 2 Tablespoons Hoisin Sauce
- 2 Tablespoons Sriracha (less if you don’t love the heat)
- Saute in olive oil…
- Once squash is cool enough to handle, remove seeds and shred “meat” into skillet. Stir to coat. Heat through
Like I said, this was good but not great. Maybe a different Asian-inspired sauce? More garlic? Salt and pepper? This was an quick, easy, and inexpensive dish on a cold fall night, but I’m definitely contemplating ways for it to knock your socks off!
