One Pot Chicken Stroganoff Lasagna

Chicken LasagnaOkay…I get that breaking lasagna noodles into pieces probably precludes this dish from REALLY being lasagna. Feel free to move on if you’ve got time to boil and layer noodles. If you’ve got hungry diners and less than an hour, try out this recipe:

  • In large sauce pot, saute in olive oil…
    • 1 pound of chicken breast, cut into bite-sized pieces
    • 1 onion, chopped
    • 1 T. minced garlic
    • 8 ounces baby bella mushrooms, sliced
  • Once chicken is cooked and onion is soft, stir in…
    •  3 cups chicken stock
    • 2 Tablespoons Worcestershire sauce
    • 1 box of lasagna noodles, broken into bite-sized pieces
    • Bring to a boil. Reduce heat to low. Cover and simmer until noodles are soft (15-20 minutes)

    • 8 ounces sour cream
    • 4 ounces mozzarella cheese

The flavors in this speedy pasta were awesome! Definitely choose your own favorite noodle form and be adventurous with your sour cream (I opted for french onion).
