One-Pot Mexican Noodles

Anymore, whenever I see a pasta recipe, I ask myself how I can turn it into a one pot dinner! The recipe below is the product of those imaginings:

    • One small onion, chopped

    • 12 ounces of dry pasta
    • 1 cup of milk
    • 2 cups of chicken broth
    • 1/4 teaspoon cayenne pepper
    • 1 teaspoon chili powder
    • 1/4 teaspoon cumin
  • Bring to a boil. Reduce heat to low and simmer with the lid on for 15-20 minutes, adding more liquid if needed.

I was 100% happy with the outcome of this dish, and I had two dinner guests that agreed! I served the final bowls with pico de gallo, which was delish. I think adding a can of chopped of  tomatoes with green chiles along with the other liquids would also yield yummy results!
