Anymore, whenever I see a pasta recipe, I ask myself how I can turn it into a one pot dinner! The recipe below is the product of those imaginings:
In large skillet, saute…
- One package spicy chicken sausage, sliced
- One small onion, chopped
- One poblano pepper, chopped
- Once meat is cooked and onion is soft, stir in…
- 12 ounces of dry pasta
- 1 cup of milk
- 2 cups of chicken broth
- 1/4 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1/4 teaspoon cumin
- Bring to a boil. Reduce heat to low and simmer with the lid on for 15-20 minutes, adding more liquid if needed.
- Once noodles have reached desired texture, stir in…
- 4 ounces Mexican blend cheese
- 1 can black beans, rinsed
I was 100% happy with the outcome of this dish, and I had two dinner guests that agreed! I served the final bowls with pico de gallo, which was delish. I think adding a can of chopped of tomatoes with green chiles along with the other liquids would also yield yummy results!
