Buffalo Chicken Bubble Up

buffalo chicken bubble upThe following recipe falls under the “cheating” category, but we all need a break from health food now and again! Keep it lighter by buying reduced fat biscuits, light ranch, and skip the cheese.

  • In large mixing bowl, combine…
    • 8 large biscuits, each cut into eight pieces
    • 1 to 2 cups of shredded rotisserie chicken
    • 4 ounces cheddar cheese
    • 1/4 cup buffalo sauce
    • 1/4 cup ranch dressing
  • Mix well (adding more ranch or buffalo sauce if needed) and place in greased 8 x 8 dish. Sprinkle with bacon crumbles and bake at 375* for 30ish minutes, until biscuits are plumped and browned.

I like my biscuits to get a little crispy on top. If that isn’t your preference, place the meal in a larger pan (somewhere between 8×8 and 9×13). You will ensure that all the biscuits get cooked through.
