I read a recipe recently that asked the cook to put potatoes in a quiche (I can read cookbooks like novels). I thought this seemed insane initially, but I’m quite happy I tried it.
- Line a 9 inch pie pan with your favorite pie crust.
- Heat one bag of frozen roasted potatoes and green beans according to package directions.
- Place in prepared pie pan.
- Saute 8 ounces of breakfast sausage and 4 ounces of sliced mushrooms.
- Place in prepared pie pan.
- Whisk…
- 1/2 cup of heavy whipping cream
- 4 eggs
- Salt and pepper to taste
- Pour over veggies and meat.
- Sprinkle with cheddar cheese.
- Bake at 425* until eggs are set—30-40 minutes.
I might have “oops’ed” the cream to 3/4 of a cup, and you could definitely put in another egg or two–there was room in the pan. I also think a full 8 ounces of mushrooms would have fit if you don’t want to have half a pesky container of mushrooms floating around the fridge. This was delicious straight out of the oven and leftover. I’m filing it away as “make again!”
