Spicy Pork and Sweet Potatoes

Fall hit me hard this week, and I was craving sweet potatoes (super weird, I know). I was also feeling lazy and really wanted to use my slow cooker! Check it out:

  • In 5 quart slow cooker, place…pork and sweet potatoes
    • 2 pounds of uncooked pork tenderloin, cut into 1 inch cubes
    • 2 pounds of sweet potatoes, cut into 1 inch cubes
  • In small bowl, combine…
    • 14.5 ounce can of diced tomatoes with chiles
    • 1/2 cup orange juice
    • 3 green chopped green onions
    • 1/2 bulb garlic, crushed
    • 1 t. salt
    • 1/2 t. ground cumin
    • 1/4 t. black pepper
    • Pour on top of meat and potatoes.
  • Cook on low for 7 hours. Once cooked, stir in…
    • Juice from half a lime
    • 2 T. fresh, chopped cilantro

Considering my affinity for casseroles and pasta, I’m often amazed that I can make an entire delicious meal without cheese. Additionally, I had a fairly small serving of this and was totally satisfied based on it’s intense and satisfying flavor* (for once, I had two lovely dinner guests {my parents} who agreed). Please excuse the amateur photo…I couldn’t find my camera ANYWHERE! Rest assured, this was an awesome meal, despite it’s lack of aesthetic appeal.
