Quick Shrimp Enchilada Bake

I love a quick dinner! This casserole came together in about ten minutes; the only time-intensive thing was peeling the shrimp. It would have been even quicker if Fareway would have had green chiles in stock (I minced the jalapenos and banana peppers I had in the fridge instead). It seemed like a shame to chop the shrimp, but it was nice to have yummy seafood in every bite. Of course, I used the whole bag of Mexi-cheese on the top, versus the one cup the recipe called for, and I used a whole bag of corn. I also skipped the limes because they looked terrible at the store yesterday.  Final verdict: AAAAAAAAmazing! To think… I used to hate cilantro!

P.S. I think this could also be delicious with black beans instead of refried!
