Zucchini Rice Casserole

zucchini riceI love this one. Love. Love. Love. It makes me feel good about my vegetable intake of the day. It takes forever though so please don’t test it out when you are starving.

I use one yellow squash + one zucchini; one red pepper, one green, and dollop more cream cheese on the top than called for. The cream cheese bites are the best of the casserole! I love that the whole thing has a bit of a kick which makes it seem more indulgent. Oh–and don’t waste your time stirring the corn into the pepper jack sauce; just dump it into the pan with the cooked sausage (instant defrost!), add into the rice/veggie mix, and then pour on the cheese sauce (I find this makes the sauce easier to pour/stir)!

P.S. This casserole freezes really well!

P.S.S. This is a great time to buy the less expensive block cheese because you you just melt it into the sauce (I skip sprinkling a handful on top).
