Cajun Shrimp Skillet

Shrimp never really seems to be in the budget, but I realllly wanted it this week. I was happy I splurged. 🙂

  • In large oven-safe skillet, saute…
    • One white onion, chopped
    • 2 stalks celery, sliced
    • 2 bell peppers, chopped
  • Once vegetables are soft, add…
    • 1 pound of shrimp, peeled
    • 1 teaspoon Cajun seasoning (or more!)
    • 2 T. garlic
    • 1 can black beans, rinsed
    • 1 can fire roasted tomatoes
    • Simmer until shrimp are pink.
  •  In separate bowl, prepare corn bread:

  • Sift together…
    • 3/4 cup flour
    • 1/3 cup cornmeal
    • 1 T. sugar
    • 1 1/4 teaspoon baking powder
    • 1/4 t. salt
  • In separate bowl, mix…
    • 1 egg
    • 1/4 cup milk
    • 2 T. canola oil
  • Combine wet and dry ingredients. Dollop onto shrimp. Place skillet into 400* oven for 15ish minutes.

I attempted 8 corn dumplings, but next time, I will just spread the cornbread over the whole kit and caboodle like a crust. I think you could easily amp up the spice with red pepper flakes or more Cajun seasonings!
