Low Carb Mexi-Mash

My tastebuds are super happy I made this cheesy, spicy, low carb casserole. I prepared the whole thing yesterday morning, but then I spent a little too much time at my cousin’s pool so I had to bake it today. 🙂 I like knowing that this is a delicious ‘make ahead’ recipe!

Cauliflower Mashmexi mash

  • Break one head of cauliflower into small pieces.

    • 2 T. butter
    • 2 T. heavy whipping cream
    • Microwave on high for 10-12 minutes, until soft enough to mash.

    • 1 seeded, chopped jalapeno
    • 4 ounces sharp cheddar cheese
    • 2 T. chipotle pepper in Adobo sauce
  • Place in the bottom of a greased 2 quart casserole dish

  • Top cauliflower mash with 1 cup of cooked, chopped chicken

    • 8 ounces sour cream
    • 1/2 cup salsa verde
    • Pour over chicken
  • Top verde sauce with…
    • 1 chopped tomato
    • 1 seeded, chopped jalapeno
    • 2 ounces sharp cheddar cheese

Bake casserole at 350* for 20ish minutes (longer if its been in the fridge), until cheese is bubbly. Mmmmmm………………..
