…or at least that is what I think this spicy, peanut-y casserole tastes like!
I started with this recipe. Fareway didn’t have peanut sauce, so I mixed up my own:
- 1/2 c. peanut butter
- 1 t. white sugar
- 2 T. soy sauce
- 1 minced garlic clove
- Pepper sauce (to taste)
- Combine all before whisking in 2/3 cup of water (or as much is needed to make the sauce smooth)*
Instead of prepackaged chicken, I boiled and shredded two chicken hindquarters. Also, I cooked up three packages of Ramen (sans seasonings) as I wanted to have enough leftovers for the whole week. I really, really, really liked this casserole! It’s definitely more ‘comfort food’ than health food though! Next time, I think I would do my own vegetables–mushrooms, onions, water chestnuts, peppers, spinach, etc. Don’t skip the crispy toppings because they totally made the meal!
*I added an extra 1/2 of everything to ensure there was enough sauce.
