This Sunday casserole (made on Tuesday) really had a kick and seemed way too indulgent to have come from Cooking Light. I did use two chipotle peppers instead of one, but *gasp* I followed the recipe other than that. That is sort of a lie as I chopped the whole package of Canadian bacon (what else was I supposed to do with it?!) and, in all honesty, probably did add an extra handful of cheese.
Serve with a sweet Diet Coke…or a cold beer.
