Chipotle Meatloaf

It may almost be October, but Indian summer seems here to stay! Despite the warm temps, my tummy is craving all sorts of comfort food. Check out this spicy twist on classic meatloaf…

  • meatloafIn large mixing bowl, combine…
    • 2 pounds of ground turkey
    • 1/2 white onion, finely chopped
    • 1 T. minced garlic
    • 1 t. salt
    • 1/4 t. black pepper
    • 1/2 t. oregano
    • 2 chipotle peppers (from a 7 ounce can), finely chopped
    • 1 T. chipotle sauce (from 7 ounce can)
    • 1/4 cup tomato sauce
    • 2 egg whites
    • 1/4 cup breadcrumbs
    • 1/4 cup oatmeal
  • Shape into greased 8 x 8 casserole dish. Bake in a 350* oven for 30 minutes.
  • While baking, combine…
    • 1/4 cup tomato sauce
    • 2 T. ketchup
    • Hot sauce to taste
  • Top meatloaf with sauce and return to oven for 30 more minutes.

No one makes meatloaf like my Aunt Rachel, but I was pretty pleased with this! I’m such a sucker for spicy food, and the heat in this made the meal super satisfying–I was totally content with my one serving! Definitely don’t skimp on the sauce…it’s my favorite part of meatloaf!
