In large mixing bowl, combine…
- 2 pounds of ground turkey
- 1/2 white onion, finely chopped
- 1 T. minced garlic
- 1 t. salt
- 1/4 t. black pepper
- 1/2 t. oregano
- 2 chipotle peppers (from a 7 ounce can), finely chopped
- 1 T. chipotle sauce (from 7 ounce can)
- 1/4 cup tomato sauce
- 2 egg whites
- 1/4 cup breadcrumbs
- 1/4 cup oatmeal
- Shape into greased 8 x 8 casserole dish. Bake in a 350* oven for 30 minutes.
- While baking, combine…

- Hot sauce to taste
- Top meatloaf with sauce and return to oven for 30 more minutes.
No one makes meatloaf like my Aunt Rachel, but I was pretty pleased with this! I’m such a sucker for spicy food, and the heat in this made the meal super satisfying–I was totally content with my one serving! Definitely don’t skimp on the sauce…it’s my favorite part of meatloaf!
