Chicken and Broccoli Casserole

This Sunday’s casserole was very indulgent despite being made with lots of light ingredients.* I am too cheap to pay $4.99/lb. for boneless, skinless chicken breasts, so I picked up chicken hindquarters at a fraction of the cost. Additionally, I bought Green Giant ‘steam in the bag’ fresh broccoli florets so they were ready in the microwave in just five minutes. My last non-recipe addition: corn. Why not? I truly felt like Rachael Ray as I sprinkled two hefty handfuls of parm on the top before baking.  Another perfect Sunday Supper…though next time, I will add mushrooms!

* Sorry, Grandma Babe. I used light mayo. 🙂
